The calculator preserves the proportions of the reference recipe:
scale factor = available prepared fruit or juice ÷ reference fruit or juice
total pectin = reference pectin × scale factor
total sugar = reference sugar × scale factor
separate batches = ceiling(scale factor)
For example, if one tested recipe uses 4 cups prepared fruit, 5 cups sugar, and 1 packet of pectin, then 10 cups of the same prepared fruit equals 2.5 recipe batches. The planning totals are 12.5 cups sugar and 2.5 packets, divided into two full batches and one partial batch. A fractional packet is practical only when the product directions allow a partial batch and provide a reliable way to measure it.

The National Center for Home Food Preservation explains that a successful gel needs the correct balance of fruit, pectin, acid, and sugar, and that powdered and liquid pectins are not interchangeable. Its general canning guidance recommends making one batch at a time because increasing recipe quantities often produces a soft gel.
Oregon State University Extension likewise advises following commercial pectin directions exactly, not reducing sugar in traditional recipes, and not doubling recipes. Some products have explicit flex-batch instructions; use those only for the product that provides them.
