How to Calculate Fermentation Salt by Weight

  1. Read the recipe's percentage definition. Choose water only when percentage is based on water weight. Choose total batch only when the recipe explicitly uses vegetables plus water.
  2. Tare the container and weigh each ingredient. Keep every entry in the same selected unit.
  3. Enter the recipe's target percentage. The calculator multiplies that percentage by the correct base weight.
  4. Weigh the calculated salt. A scale avoids the density differences between fine, coarse, flake, and kosher salts.
  5. Follow the complete tested process. Percentage math does not replace instructions for preparation, temperature, timing, submersion, acidity, or storage.

Water-only vs Total-batch Brine Percentage

Water-only percentage

This method compares salt with water. For 1,000 g water at 2%, the salt amount is 20 g.

salt = water × percentage ÷ 100

Total-batch percentage

This equilibrium-style method compares salt with vegetables plus added water before salt. For 1,000 g vegetables and 500 g water at 2%, the salt amount is 30 g.

salt = (vegetables + water) × percentage ÷ 100

The same number can produce different salt amounts because the denominator changes. If a recipe says “2% brine” without defining its basis, find a clearer tested recipe instead of guessing which method the author intended.

How to Check an Existing Brine Percentage

Choose Percentage from a salt amount, enter the salt and ingredient weights, and select the basis used by the recipe. The calculator divides salt by that base weight:

percentage = salt ÷ calculation weight × 100

For example, 30 g salt with 1,000 g vegetables and 500 g water is 2% on a total-batch basis. The same 30 g salt is 6% on a water-only basis because only the 500 g water is used as the denominator.

Fermentation Safety and Assumptions

Recipe-math limit: This tool cannot determine whether a ferment is safe to eat. Salt concentration is only one part of a validated process. Use a current research-tested recipe and follow its exact ingredient proportions, salt type, preparation, container, temperature, submersion, timing, and storage directions.

The National Center for Home Food Preservation explains that salt is vital to the safety and texture of fermented sauerkraut and brined pickles and recommends tested ingredient proportions. University of Minnesota Extension advises keeping produce covered by brine and notes that too much salt can prevent fermentation and acid development. Weighing is useful for repeatable math, but the calculated percentage is not proof that acidification, temperature, or storage conditions are adequate.

Use canning or pickling salt when a tested recipe calls for it. Volume measures can vary with crystal size and packing, which is why this page does not convert the result into teaspoons or tablespoons.
