How the calculator works

At 325°F, the result uses the published USDA weight band directly. For example, a 14 lb unstuffed whole turkey uses the conservative 14–18 lb band: 3¾ to 4¼ hours. The calculator treats boundary weights such as 12 lb and 14 lb as the start of the next, more conservative band.

For a conventional oven above 325°F, it applies a transparent planning adjustment:

adjusted minutes = USDA 325°F minutes × (325 ÷ selected °F)

This temperature adjustment is a scheduling heuristic, not a USDA timetable. Oven calibration, bird shape, starting temperature, roasting pan, opening the door, and stuffing can change the finish time. Follow the turkey label or a tested recipe when it gives different instructions, and let thermometer readings decide when the turkey is done.

Times are approximate for fresh or completely thawed turkey in a conventional oven. The calculator is not for a frozen turkey, spatchcocked bird, oven bag, grill, smoker, fryer, microwave, air fryer, or countertop roaster.

Turkey servings by raw weight

The standard plan uses 1 lb (0.45 kg) of raw whole turkey per person or ½ lb (0.23 kg) of bone-in breast per person. The generous plan raises those amounts to 1½ lb and ¾ lb respectively to allow for bigger portions and leftovers.

Those are shopping estimates, not exact edible yields. Bone size, cooking loss, appetite, side dishes, and how much white or dark meat guests prefer will affect the number served. For a crowd requiring more than a 24 lb bird, two smaller turkeys can be easier to handle and fall within the published chart.

How to use the turkey cooking plan safely

  1. Thaw completely. The timing chart assumes a fresh or fully thawed turkey. Refrigerator thawing generally needs about 24 hours for each 4–5 lb.
  2. Preheat to at least 325°F. Put the turkey breast-side up on a flat rack in a shallow roasting pan. Follow package directions for brined, pre-basted, kosher, or specialty products.
  3. Start checking early. The calculator schedules the first thermometer check 30 minutes before the low end of the estimated range.
  4. Check three places. Verify at least 165°F in the thickest part of the breast and the innermost part of the thigh and wing. Avoid touching bone with the probe.
  5. Check stuffing separately. The center must also reach 165°F. USDA recommends cooking stuffing in a separate casserole for more even cooking and optimum safety.
  6. Rest for about 20 minutes. Rest before carving or removing stuffing. Refrigerate cooked turkey and stuffing within two hours.

How long does a turkey take to cook per pound?

Minutes per pound vary with turkey size and stuffing. At 325°F, the USDA chart works out to roughly 12 to 23 minutes per pound across its whole-turkey bands. Use the published weight band and verify 165°F with a food thermometer rather than relying on a single per-pound rule.

What temperature should I cook a turkey at?

USDA guidance says to set the oven no lower than 325°F (163°C). The turkey is safe when it reaches at least 165°F (74°C) in the thickest part of the breast and the innermost parts of the thigh and wing.

How long does a 12 pound turkey take at 325°F?

Does a stuffed turkey take longer?

Yes. The USDA chart gives longer approximate times for stuffed whole turkeys, and the center of the stuffing must also reach 165°F. For more even cooking and optimum safety, USDA recommends cooking stuffing separately.

How much turkey do I need per person?

A practical starting point is 1 lb of raw whole turkey per person or 1½ lb when you want generous portions or leftovers. For bone-in turkey breast, plan about ½ lb per person, or ¾ lb for generous portions.

Can I roast a frozen turkey?

USDA says a whole turkey can be roasted from frozen, but it takes at least 50% longer and must not be stuffed. This calculator is for fresh or completely thawed turkey; use USDA frozen-turkey instructions instead.

Is turkey done when the juices run clear?

No. Color and juices are not reliable safety tests. Check with a food thermometer in the thickest breast and innermost thigh and wing, avoiding bone. Each location must reach at least 165°F.
