How to Use the Smoke Point Finder
Read the oil label. Identify both the oil and its grade. Refined and unrefined versions can behave very differently.
Enter the planned oil temperature. Use the recipe, package, or appliance instruction. The 320°F, 350°F, and 375°F buttons are quick USDA-based examples.
Review the reference margin. The tool subtracts the planned temperature from the listed smoke point. For a published range, it compares against the low end first.
Use a suitable thermometer. Burner settings and pan-surface readings are not the same as the bulk oil temperature.
Watch the oil continuously. If it smokes unexpectedly, reduce or stop the heat. Do not treat a chart value as permission to keep heating.
Check food doneness separately. Remove food before checking its internal temperature with a clean food thermometer.
Hot-oil safety: Keep water away from hot oil, dry wet food before lowering it carefully, never leave frying unattended, and never pour water on a grease fire. Turn off heat if safe, cover a small pan fire with a metal lid, use a suitable kitchen fire extinguisher, and call emergency services when needed.

These numbers preserve the form used by each source: fixed USDA approximations, a published olive-oil range, and a minimum reported for refined avocado oil. They are comparison references, not batch tests.
USDA’s home deep-frying examples demonstrate that the target depends on the food. Use a recipe-specific temperature and measure the food separately for doneness.

What the Temperature Margin Means
Reference margin = approximate smoke point − planned oil temperature
The finder labels a margin of at least 25°F (about 14°C) as a comfortable reference margin. A 10–25°F margin is narrow, less than 10°F is very close, and a target at or above the reference is flagged. These bands are transparent planning assumptions created for this comparison; they are not official safety thresholds.
For olive oil, the result uses the bottom of UC Davis’s published range first. A target that lands inside the range is labeled product-dependent because grade, quality, and freshness determine where a particular oil falls. For a custom bottle value, the tool treats the entered number as a fixed reference.
Why an Oil May Smoke Earlier
Refining and grade
Refining removes compounds that can lower smoke point. “Olive oil,” “extra virgin,” “virgin,” and refined products should not be treated as interchangeable.
Age and storage
Heat, light, air, and time can degrade oil. A stale or rancid bottle may not match a fresh reference sample.
Food particles and moisture
Crumbs can burn and create visible smoke before the bulk oil reaches its nominal smoke point. Water can cause violent splattering.
Repeated heating
Reused oil changes with each frying cycle. Unexpected smoke, persistent foam, darkening, thickening, or off odors are reasons to stop using it.

What is a cooking oil smoke point?
It is the approximate temperature at which an oil produces a continuous visible smoke and degrades more rapidly. Smoke point is lower than flash point and fire point; it does not predict when oil will ignite.
What temperature is normally used for deep frying?
Many recipes use 350–375°F (177–191°C), while delicate fish and seafood examples may use about 320°F (160°C). Follow the specific recipe, food package, and fryer manual.
Why do smoke point charts disagree?
Grade, refining, free-fatty-acid content, freshness, storage, food particles, testing method, and prior heating all matter. That is why this page labels every number as approximate.
Can extra-virgin olive oil be used for frying?
Some olive oils tolerate frying temperatures, but a single number cannot represent every grade and bottle. UC Davis reports 347–464°F (175–240°C) across olive oils; use a producer specification when possible.
Can frying oil be reused?
Previously heated oil can smoke sooner as it degrades or collects particles. Filtered appearance alone does not restore the oil. Discard it if it smokes unexpectedly, foams, smells rancid, or becomes unusually dark or thick.
Does smoke point tell me when food is safely cooked?
No. Smoke point is an oil property. Food safety requires a separate internal-temperature check with a clean thermometer after the food leaves the oil.
