Refining removes compounds that can lower smoke point. “Olive oil,” “extra virgin,” “virgin,” and refined products should not be treated as interchangeable.

Hot-oil safety: Keep water away from hot oil, dry wet food before lowering it carefully, never leave frying unattended, and never pour water on a grease fire. Turn off heat if safe, cover a small pan fire with a metal lid, use a suitable kitchen fire extinguisher, and call emergency services when needed.
These numbers preserve the form used by each source: fixed USDA approximations, a published olive-oil range, and a minimum reported for refined avocado oil. They are comparison references, not batch tests.

USDA’s home deep-frying examples demonstrate that the target depends on the food. Use a recipe-specific temperature and measure the food separately for doneness.

Times are examples, not timers for every size or appliance. Do not test internal temperature while food is submerged in oil; USDA advises removing it first and using a clean food thermometer.
Reference margin = approximate smoke point − planned oil temperature
The finder labels a margin of at least 25°F (about 14°C) as a comfortable reference margin. A 10–25°F margin is narrow, less than 10°F is very close, and a target at or above the reference is flagged. These bands are transparent planning assumptions created for this comparison; they are not official safety thresholds.
For olive oil, the result uses the bottom of UC Davis’s published range first. A target that lands inside the range is labeled product-dependent because grade, quality, and freshness determine where a particular oil falls. For a custom bottle value, the tool treats the entered number as a fixed reference.

Heat, light, air, and time can degrade oil. A stale or rancid bottle may not match a fresh reference sample.
Crumbs can burn and create visible smoke before the bulk oil reaches its nominal smoke point. Water can cause violent splattering.
Reused oil changes with each frying cycle. Unexpected smoke, persistent foam, darkening, thickening, or off odors are reasons to stop using it.
It is the approximate temperature at which an oil produces a continuous visible smoke and degrades more rapidly. Smoke point is lower than flash point and fire point; it does not predict when oil will ignite.
Many recipes use 350–375°F (177–191°C), while delicate fish and seafood examples may use about 320°F (160°C). Follow the specific recipe, food package, and fryer manual.
